Steamed Mussels in Creamy Wine and Garlic sauce





Ingredients :-

Mussels - 2 dozen ( cleaned well and beards scrubbed off under cold water )
Onion - 1 medium sized ( chopped fine )
White Wine - 1/2 cup
Dried Parsley- 1 tbsp
Sweet Basil - 1 tbsp.
Garlic - 6 flakes ( finely chopped)
Butter- 2 tbsps.
Cream - 1 cup

Salt as per requirement


Method :-

Take a big pot and heat butter .Add onion and Garlic and sauté. Throw in the dried herbs and add the wine and simmer for about 5 minutes. Place Mussels in pot ,stir well and steam till Mussels open. Please discard the ones that remain closed.
Add the cream and give it a good stir. Cook for about 5 to 7 minutes stirring from time to time.

Taste sauce for salt ( I don't use any but some may like a little of it )

Lastly add a dollop of LOVE ;)

Serve hot with Crusty bread..... Yummmmm!!!  Happy Eating... you will be sorry you didn't cook more..;) Enjoy!!

* If you don't want the Cream, don't add it... the Broth is awesome too... just dip the Crusty bread in it... :)




GOAN  PRAWN XEC XEC ( quick ,easy and utterly yummy... )

Ing :-

Prawns -  1 and 1/2 kg cleaned and deveined ( wash well,apply salt and leave to rest )
Onion - 1 large or 2 med cut fine
Tomato- 2 med sized ,chopped fine
Ginger - 1/2 inch chopped fine
Garlic- 4 flakes chopped fine
Turmeric powder- 2 tsps.
Coconut milk - 1 can
Green chillies - 6 ,slit

Dry Roast the following and grind to a powder :-

Kashmiri chillies- 5
Coriander seeds -1 and 1/2 tbsps.
Cummin seeds - 1 tbsp.
Pepper corns- 1 tbsp.

Oil as per required
Salt to taste

Method:-

In a non stick pan ,heat oil and brown onions ,ginger n garlic till light brown in colour. Add the chopped Tomato and further fry till it dries out . Add the ground masala and mix well. Fry for 5 minutes.Add the turmeric powder , slit green chillies and season with salt.
Add the coconut milk and bring to a boil . Add the prawns and cook for about 20 minutes.
Add heaps of love and serve with hot steamed rice....:) :)

( Please note this curry base can also be used for a veg curry .)

Succulent Oriental Fish

 


Ingredients :-

Any white meaty fish boneless n skinless  ( I used Hammour ) - 1/2 kg
Star Anise - 2 ( whole)
Kaffir leaves - 5
Lemon Grass - 1 tall sprig ( cut into 3 to 4 bits )
Green Pepper - 1  ( big sized ,diced )
Garlic - 5 flakes ( Chopped fine )
Ginger - 1/2 inch ( Chopped fine)
Green Chillies - 6 ( slit )
Fish sauce - 1 and 1/2 tbsps. ( available at all supermarkets in the Asian or Thai section )
Oyster sauce - 2 tbsps
Red Onion - 1 ( big sized ,cut length wise and not too thin.. )
Salt - to taste
Pepper powder - 2 tsps.
Oil as per required

Method:-

Wash Fish, cut into medium pieces, apply salt and leave to rest .
Heat oil in a non stick pan , add the Kaffir leaves, Green Pepper, Star Anise , Lemon grass, ginger, garlic n Green Chillies and toss. Once it gives out a subtle aroma add the fish sauce and place pieces of fish in the pan . Fry a bit turning them quickly . Sprinkle pepper powder and toss again.... Now add the oyster sauce ,mix well, cover and cook till done. ( tossing fish from time to time ) .Lastly add a dollop of Love :)

This is a simple and quick Recipe but utterly delicious. Happy Eating !!

Quinoa with Squid

 




( Quinoa ( PRONOUNCED AS KEENWAH) is a very healthy option for those who are Gluten intollerant. Yes!! its GLUTEN FREE . Its the best next thing to Rice... Its very tasty and you can try interesting things with it )

Ingredients :-

Quinoa                  - 1 cup (wash in cold water and drain)
Water                    - 1 n 1/2 cup
Squid                     - 1 cup of squid rings  ( cut squid into rings after cleaning thoroughly, wash n drain  )
Spring onion           - 3/4 cup  chopped fine
Ginger                    - 1 tsp chopped fine
Garlic                     - 2 tsps chopped fine
Coriander Leaves   - 3 tbsps chopped fine
Green Chillies         - 3 ,chopped fine
Pepper Powder      - 1 tbsp
Fennel seeds           - 1/2 tsp
Veg Stock cube      - 1
Oil                          - 2 tbsps

Method :-

Heat the water to boiling point and lower flame. Throw in the washed Quinoa and let it cook for 15 minutes. Stur a bit , u will see it swell .... Further simmer for another 10 minutes by now the water would have dried . Stir it and leave aside to rest.( if you want you may add a little salt to the boiling water )

In a non stick pan heat oil,and fry spring onion till soft. Add the stock cube whole and mix well. Add all the remaining  ingredients except the Squid ,one at a time ,frying well. Once the mixture is cooked throw in the squid a stir fry till done.Make sure you dont over cook the Squid . Once done , take off flame and mix the Cooked Quinoa in this stir well and add the LOVE,not to forget that one..;) , and serve hot .... Enjoy this spicy treat.......

Stuffed Grilled Pomfret





Ingredients :-

 Fresh Medium sized Pomfrets- 4 fish cleaned well (take off head ) and make slits on both both sides for stuffing. Rub a little salt on fish outside as well as inside slits and leave to rest.

Onions          -          3 big cut fine,
Tomato         -          1 big ,deseeded and chopped fine,
Ginger Paste  -         1 tbsps,
Garlic  Paste  -         2 tbsps ,
Green  Chillies-        6 green chillies cut fine,
Coriander Leaves -  1/2 cup leaves chopped fine,
Green Pepper -        1 Medium sized pepper cut fine,
Fenugreek Leaves-   2 tbsps chopped fine
Lemon Juice         -   1 1/2 tbsps

Powdered Masalas-
Coriander - 1 tbsp
Cummin - 1 1/2 tbsp
Turmeric - 2 tsps
Garam Masala-1/2 tsp

Salt to taste
Oil enough to fry the stuffing ing , grease grilling tray,and tips of fingers.

Method :-

Preheat Oven Grill on medium or at a 120 deg

Add a little oil in a pan and fry onions till soft n light brown. Throw in tomato and fry till soft and when it starts to dry a little add in all the other ing n mix well... turn the flame on slow,add about 3 tbsps of water to this mixture and stir till it dries. Take off flame and leave to cool a bit.( taste for salt ,add more if needed)
Take Grilling tray and add oil in it.Gently tilt tray so that oil spreads well inside . Now take each pomfret and gently fill the stuffing inside slits ( be generous :) at the same time dont over stuff the fish ) and place stuffed fish in tray . After stuffing all the fish ,gently place tray inside the oven and Grill till done. ( Fish cooks really fast ,so check to see that it doesnt get burnt... once a little brown in colour turn off the grill and leave it inside the oven for about 15 minutes . Garnish with sliced onions and a spatula of "LOVE" ;) ...ENJOY!!!!

Grilled Salmon in Mango Chilli n Ginger





Ingredients : -
Salmon fillets- 2 kgs in total
Ginger Powder - 3 tbsps *
Garlic Powder- 4 tbsps*
Chilli Flakes -12 tsps
Mustard  seeds- 2 tbsps *
Cummin seeds- 2 tbsps *
Pepper Powder - 1 tbsp *
Salt enough to season fish well.*
Cummin powder- 3 tsps *
Coriander powder - 3 tsps*

Mango Sauce-

Diced sweet ripe mango- 1/2 cup
Lemon - 2 ( squeezed )
Malt vinegar - 3 tbsps
Chilli powder - 2 tsps
Fresh root ginger - 1 inch minced very fine
Brown sugar - 2 tbsps  
olive oil- 3 tbsps
Salt - a pinch
Corn flour - 2 tsps ( mix with 2 tsps of water )
Water- 5 tbsps

Method :-

Pre heat oven at 120 deg

Take a baking tray and grease with olive oil . In a mixing bowl take all the ing marked with an  * and blend well with a spoon.. Now place pieces of salmon tn baking tray n sprinkle this mixture all over the fish .. Use your hand to rub all this well into the fish...and leave to rest while you make the sauce.

For the sauce, Take a pan and add olive oil....careful not to burn it .... once warm ( low heat at all times) add the chilli podwer and the salt n quickly stir in the ginger..once it starts to brown add the water  and mix.Give it one boil and then add the vinegar and brown sugar n mix well... then add the Diced sweet mango and stir well and add te lemon juice .Taste for salt . Add the corn flour a stir continuously. Once it starts to thicken take off gas and poon this onto each fillet .. ( a little in the center should be good ,and you can spread it over the fillet with the back of a spoon ) lastly sprinkle the chilli flakes over each fillet and grill till done n chilli flakes turn to a rich brown... add the love lastly n yummmmmmmmmmmmmmmmmmmmmm ;)

Prawn Chilli with Cabbage





Ingredients :-

Prawns- 1 kg ( completely cleaned , washed and drained   )
Finely Chopped Cabbage - 2 cups
Soya Sauce- 1 n 1/2 tbsps  ( you can add more if you like)
Garlic- 8 flakes ( chopped fine )
Ginger- 1 n 1/2 inch (chopped fine)
Coriander Leaves- 1 cup ( chopped fine )
Green Chilli- 10 pieces (chopped fine)
Spring onion - 1 n 1/2 cup (chopped fine )
Green Capsicum- 1/2 piece ( chopped fine )
Veg Stock cube - 1
Pepper powder - 1 tbsp
Sesame oil- 3 tbsps ( you can use any other oil too )

Salt as per taste .

Method :-
Heat Oil on low and then on high quickly throw in the chopped ginger,garlic,chilli and capsicum  and toss n fry till light brown.. throw in the spring onion n coriander leaves and further fry. Add stock cube and pepper powder and 1 tbsp soya sauce and quickly stir....add prawns.. and fry till just done... Take off in a serving dish and in same pan.... throw in the chopped cabbage... mix well...the residue of the prawn mixture will give the cabbage a nine mild flavour.. season with salt and add remaing soya and fry on high till just done. Take off pan and serve with prawn and love ;)

Tandoori Salmon .... my style ;)



Some people prefer to use the ready made Tandoori masala but i prefer to grind my own as below, having learned the hard way. I tried this one time with a ready made packet and the fish disintegrated coz of the Papain in it. However the choice is yours .... :) I would not recommend marination for an hour... less the better if you go with the ready pack. The taste will definitely vary :) Well , try it my way !!!

Ing :-

Fresh Salmon- 14 fillets
Garlic Paste- 2 n 1/2 tbsps
Ginger Paste -2 tbsps
Red Chilli Powder -2 tbsps*
Cloves- 9*
Cumin Seeds - 1 tbsp*
Coriander Seeds - 1 tbsp*
Cinnamon - 1 inch stick*
Fennel seeds- 1 n 1/2 tbsps*
Mace- 4 strands*
Pepper Corns - 1 n 1/2 tbsps*
Cardamom- 6 pcs*
Nutmeg- 1/4 piece *
Kasuri Methi / Fenugreek Powder- 1tsp*
Tomato Paste / ready made Puree - 2 n 1/2 tbsps
Cooking Cream - 3 tbsps ( you can use Curd instead of cream )
Lemon Juice - 2 n 1/2 tbsps
Red food colour - as required  (also optional)
Salt to taste
Oil as per required

Method :-

Pre heat grill on high. Once heated ,turn to medium.

Grind all the ing marked with an * and set aside.
Take fish fillets and apply lemon juice and a little salt and rub well. Add the ground Masala  and leave to marinate for an hour.

Then take a non stick pan ,add oil and throw in the ginger garlic paste and fry well on medium heat. Add the tomato puree /paste with a little water . Mix well and season with salt if needed. Add the Cream and stir on high.

Take off the gas and mix marinated pieces of fish in this cooked mixture.Apply well on all pieces and grease an aluminium foil tray with a little oil and place under grill turning from time to time till cooked . Once done increase heat to high and brown pieces of fish on both sides. Sprinkle a load of sweet love :) and Serve with some onion salad.....Enjoy!!  

Prawn Chettinad





Ing :-

Prawns- 1 kg ( cleaned well and shell taken out )
Onion- 2 (medium sized )
Tomato Puree- 2 tbsps
Mustard seeds- 1/2 tsp
Poppy seeds-1 tsp
Curry leaves- 10
Ginger Paste - 1 tbsp
Garlic Paste- 2 tbps
Green chillies- 8-10 ( cut fine )
Turmeric Powder- 1 tsp
Coriander Powder- 1 tbsp
Cumin Powder- 1 n 1/2 tsp
Chilli Powder- 1 n 1/2 tsp
Tamarind Paste- 1n 1/2 tbsps
Coriander Leaves - 3 tbsps (chopped fine )
 Salt to taste
Oil as per requirement

Method:-
In a pan heat oil and add onions,ginger paste,garlic paste,tamarind paste and chopped green chillies and fry till light brown. Once cool ,Grind it to a paste and set aside.
In the same pan add a little more oil and once hot add the mustard seeds,poppy seeds ,curry leaves and all the powdered masalas, Add a little water and put in the tomato puree. Stir n cook for 3 mins and now add the Ground Onion mixture and salt. Mix well and add the prawns and cook till done. Lastly sprinkle chopped coriander and a dollop of love ....serve with steaming hot rice...!!!

Pan Fried Salmon in Chilli Apple n Honey Sauce




Ing:-

Salmon - 14 medium sized pieces ( fish to be skinned and deboned )
Olive oil -3 tbsps
Cumin seeds- 2 tsps
Apple- 1 ( take off skin and cut into very small bits )*
Lemon - 1 ( take juice out and keep aside ) *
Honey - 2 tbsps*
Malt Vinegar - 1 /12 tbsps*
Red Chilli flakes- 3 tbsps*
Garlic paste- 2 tbps
Ginger Paste- 2 tbps
Salt as per required.

Method :-

Sauce Preparation- Combine all the ing marked with an asterix and blend in a mixer for a few seconds. Pour into a bowl and set aside.

In a large bowl pour 1 and 1/2 tbsps of olive oil , 1 and 1/2 tbsps Red chilli flakes,Garlic paste , Ginger paste,Cumin seeds  and salt and toss fish pices in it. Mix well and then add the apple honey sauce to the fish. Mix well and rub each piece well. Leave to Marinate for an hour.

Heat a non stick pan with the remaining oil and once hot add the remaining chilli flakes . Once it starts to smoke place fish pieces and fry on medium flame  turning from time to time. Once fish is cooked and starts to brown,increase the flame and brown pieces on both sides....add some love n voila...yummy fish is ready!!!

Yummy Mackerel in Coconut




* This concocted :) yummy gravy can be used to cook shrimp, oysters ,shark fish ,king fish ,chicken or        mackerel. I opted for Mackerel as i was simply lusting for it ..:) :) *

Ing:-

Cloves- 12
Cinnamon- 1/2 inch
Black Cardamom-1
Pepper corns-1 tbsp
Coriander Seeds- 2 tbsps
Fennel Seeds- 1 n 1/2 tbsps
Nutmeg- a pinch
Mustard Seeds-2 tsps
Star Anise- 1
Mace-4 strands from single piece only.

**Dry Roast the above ,get it to smoke and Grind to a fine powder and leave to rest** -


Onions- 2 ( medium sized chopped)
Ginger-1 inch
Garlic-8-9 flakes
Coriander Leaves- a hand full
Cumin Podwer-1 n 1/2 tsp
Turmeric Powder-2 tsps
Curry Leaves- 6-8
Fresh coconut or desiccated coconut- 1/2 cup
Thick Coconut Milk- 1 and 1/2 cup
Veg Stock cubes - 2
Tamarind Paste- 1 n 1/2 tbsp
Salt as per Taste


Method:-

As mentioned above ,grind the dry whole spices after roasting without any oil and leave  aside.

In the same pan dry roast the coconut with the curry leaves to a caramel brown and leave to cool.

Add oil to pan n fry onions till soft and reddish brown in colour.

Now take the coconut,onions ginger,garlic,coriander leaves, Cumin powder,Turmeric powder and Tamarind  paste and blend together with half cup of coconut milk . Grind to a smooth consistency. Open cover and now add already ground dry roasted spice mix and run through blender for 5 mins.

In your cooking vessel add a little oil and heat. Once warm add the ground Masala to to and mix and cook till it starts changing colour and the raw smell goes. Add the coconut milk and the veg stock and taste for salt. Add more salt if needed. Give it a good stir and get it to boil once ..lower flame and add the fish n cook till done... Garnish with love and serve with steaming hot rice or chapatis. Enjoy !!!!   

Mackerel fried n tempered oil




Ing :-

Mackerel- 3 ( medium sized , cleaned ,head removed n each cut into 3pcs  thus giving you 9 pieces in all )
Lemon - 1 ( big , Sliced into thin  rounds )
Small Red chillies- 10
Red dried chilli flakes- 1 n 1/1/2 tbsp
Garlic - 9 flakes cut into fine strips
Mustard seeds- 2 tsps
Cummin Powder- 2 tsps
Haldi Powder- 2 tsps
Mango powder / Amchur powder - 1 tsp
Coriander Powder- 2 tsps
Curry Leaves- 6 -8
Coconut Oil - enough to fry fish
Salt - apply a little to fish and use rest as per required.

*Please note that i used Coconut oil to fry the fish. You may use other oils but i have to warn you,the taste will most certainly vary :) :) *

Method :-

In a non stick frying pan add a generous amount of  oil and once warm add the Garlic n fry till light brown. Then add the mustard and curry leaves and let it splutter. hen add the small red chillies,chilli flakes and fry... then throw in all the powdered masalas and enough salt. Once it starts to smoke a little ,reduce flame and add pices of fish and fry gently turning from time to time . Once close to getting done,remove pan from Gas and add arrange the lemon wedges on top and return the pan to the gas cover n cook on slow for about 10 mins.... Add a whole load of love and serve steaming hot.....:) :)

Grilled Sizzling Salmon in chilli,mustard n honey

Ing :-

Fresh Salmon fillets - 1 kg ( cut into equal slices) *
Mustard Paste- 3 tbsps *
Honey -2 tbsps *
Garlic Powder- 4 tsps *
Chilli Flakes - 2 tbsps *
Maggi hot chilli sauce - 3 tbsps *
Salt - as per taste
Olive oil - a little just to grease the foil tray or baking dish.

Pre heat oven..... ( turn on the grill ) 

Method :-

In a bowl mix the ing marked with an * adding a little salt mix well

* Fish to be skinned and deboned and washed and patted dry with a kitchen towel.
Take a baking dish n put very little oil ,enough to grease the bottom . Then sprinkle little salt on it and spoon a few teaspoons of the sauce on the surface of the dish. Take each fillet one at a time n place it on the tray rubbing the salt n sauce face down . Do this to all fillets and then spoon remaining sauce on top of each fillet . Spread sauce with the back of a spoon over each fillet top. Then sprinkle a little salt over them and lastly the chilli flakes.

Place tray in oven under the grill and cook till done. Check fish and lastly increase the flame so as to brown the fish taking care not to char it...  Finish with a dollop of luv...:) :)

P.S this dish was a super hit with the hubby.... ;)...enjoy !!!

Prawn Pasta n Creamy Cheese and Garlic Sauce

Ing :-
Boiled Pasta - 4 cups
Boiled Prawns - 2 cups ( boil with salt n pepper but remember to use vey little water while boiling)
Dried Parsley-1 n 1/2 tbsp
Garlic Powder- 2 n 1/2 tbsps ( you can use  3 tbsps of garlic paste instead ...  )
Cooking cream - 2 n 1/2 cups
Freshly Ground pepper - 1 tbsp
Butter- 3 tbsps
Onion - 1 big ( chopped fine )
Parmesan Cheese - 6 tbsps

Method:-

Pre boil Pasta in a pot of salted water to which you add oil so as to prevent pasta from sticking.... Boil till al dente and draun the excess water and Leave to cool... Pre boil Prawns in very little water with salt n pepper to taste. Set aside once done .
In a large non stick pan melt butter and fry the onion till soft n and add garlic..... mix well and stir in the cream season with salt n freshly ground pepper and sprinkle Parsley . Stir well n once it starts to thicken  take off flame and add Pasta n prawn to this sauce and quickly toss it all up.... lastly sprinkle the cheese over it .... add some love n serve hot!!!

GRILLED MACKEREL FILLETS



Ing:-

16 fillets of Fresh Mackerel -( washed n patted dry)
Turmeric Powder-2tbsps
Chiili Powder-2tbsps
Coriander Powder-2tbsps
Cummin Powder-2 tbsps
Garlic Paste- 2 tbsps
Ginger Paste- 1 tbsp
Mango Powder- 1 tsp
Chaat Masala- 1/2 tsp
Lemon juice-1 tbsp
Salt - as per required

Oil enough to grease the dish ( i do it in a foil tray )

Method :-

Apply all the ing to clean and dry fish fillets and leave to marinate in the fridge for a few hours ( i leave it for 4 hours )
Preheat your oven  and grease the dish with oil and place fillets in a line but not too close to each other as it will make turning them difficult )

Grill till done n turn about twice in between cooking time.....lastly add a sprinkle of love..:)

I love to cook fish this way as it doesnt involve deep frying or shallow frying n isnt messy at all...:)....

CHILLI CRAB


Ing :-

Crabs- 2 kgs ( cleaned n halved )
Tomato Puree- 120 grams
Tomato Ketchup- 1/2 cup
Malt Vinegar / White Vinegar - 2 tbsps
Sugar- 1 and 1/2 tbsp
Dry Red Chiili Flakes - *2 tbsps ( If you dont find them then use Fresh Green chillies ,about 2 tbps , cut very fine ) *
Chilli Powder - 1 and 1/2 tbsp *
Spring onion- 1 Cup ( cut fine)*
Coriander Leaves - 3 tbsps*
Ginger - 1 inch piece ( chopped very fine )*
Garlic - 7 flakes ( cut fine )*
Veg Stock cubes - 2
Water 2 cups
Salt - as required

Oil - For Frying

Corn flour -if required .... add as much as u might need to thicken the gravy if you wish . ( add a little water to a tbsp of water n mix well n then pour into the dish n mix . Never add the flour directly as it will lump )

Method :-

Heat enough oil in a pan and fry the crabs till they change colour. Take out of pan once fried and in the same oil add all the ing marked with an * and fry well. Then add the Tomato Puree, Ketchup,Veg stock cubes, Vinegar, Sugar and the water. Stir well n taste the sauce mixture for salt n spice. If you must add more chilli powder ,please do..... like wise with the salt... Let it all bubble and drop the fried crabs into it . Mix well enough the coat the crabs with the sauce. If you want to thicken the sauce, add corn flour,but if you want a slight gravy n then leave it be. Cook in the sauce till it darkens a little... add the LOVE .... Take off flame and Attack !!!!!!! :) :)

PRAWN CHILLI FRY


Ing :-

Prawns-  1 kg (washed ,shelled and cleaned )
Onions - 3 meidum sized ( cut lenght wise )
Coriander leaves - 4 tbsps
Green Chillies- 4 ( cut fine )

Salt to taste
Oil -enough to fry

Method :-

In a non stick pan put all the ing ,season with salt and add enough oil . On slow fire cook all of this till prawns are cooked and the onions are nice n soft n turn a lovely brown... Sprinkle some love flakes......n yummmmmooooo ( This is a simple recipe ,but dont be fooled....its simply delicious :) :) )

BAKED SPICY CRAB MEAT









Ing;-

Crab Meat- 300 gms 
Yellow Pepper- 1 (big size) ( chopped in to small pieces)
Spring Onion - 2 bunches ( 8 single pieces approx cut fine) 
Green Chillies-4 ( cut fine)
Garlic-6 flakes ( chopped fine) 
Coriander Leaves chopped- 2 tbsps
Mayonnaise- 3 tbsps
Cream cheese - 1 tbsp

Salt as per required

Olive oil - 2 tbsps

Bread crumbs- enough to coat the top of the mixture once poured in to dish
Cheddar cheese grated- 4 tbsps

Method :-
Heat oil in a non stick pan and add the garlic . Fry a little and put in the Spring onion n toss a bit . Throw in the yellow pepper ,chopped coriander   and green chillies.Saute this on high flame. Season with salt n add the tbsp of Cream cheese stirring continuously. Take off the flame and throw in the Crab meat. Mix well n add the Mayo. ( When mixing note that the consistency of the mixture should not be dry.If it is you can add another table spoon of cream cheese )

Take a pyrex dish and turn put the mixture in to it. Press it down well n coat the top with a thin layer of Bread crumbs. Sprinkle cheese  and heaps of LOVE :) and bake in a preheated oven till the top turns to a Golden Brown..... ( This turns out simply YUMMMMM)

SMOKED SALMON WITH BROCOLLI AND CAULIFLOWER



Ing-

Unsalted Butter- 2 1/2 tbsps
Smoked Norwegian Salmon- 2 fillets ( cut into thin strips )
White Onion - 1 (big ) ( cut fine )
Garlic- 12 flakes ( cut fine)
Brocolli- 2 cups ( cut into medium sized florets )
Cauliflower-2 cups ( cut into medium sized florets )
Coriander leaves chopped- 3 tbsps
Single cream - 21/2 cups
Grated Cheddar cheese- 4 tbsps

Nutmeg powder- 1/2 tsp
Crushed fresh pepper - 1 tbsp 
Salt - as per required

Cherry Tomato's -8 ( cut into halves )
Olive oil / Butter for greasing.

Method :-

Heat Butter in a Pan and when it starts to melt, put in chopped onion and fry for a bit.Add chopped Garlic n toss well. Throw in the chopped Salmon bits n stir . Now throw in the chopped Brocolli n Cauliflower and season the mixture with salt , freshly ground pepper and also add the Nutmeg powder and chopped coriander leaves . Mix well and cook till the veggies are half done. Take off the burner and leave to cool a little.
Grease your dish ( oven proof ) with a little olive oil or butter and slowly pour out the mixture in to it. Pour the cream over it n randomly sprinkle the cheese on top. Garnish with Cherry Tomato's n Bake in a preheated oven on medium for about 20 mins ....... Lastly ADD THE LOVEEEEEEEEEEE :) :)

Please note that the use of cream can be less depending on how dry you may want it to be. I like mine a little moist /runny/wet ...will let you choose the word ;)....Enjoy !!!

SHRIMP DELIGHT



Ing-
Shrimp- 1kg ( cleaned n skinned)
Onion- 1 ( medium size ) chopped
Tomato- 2 ( plump n ripe ) chopped
Red Pepper - 1 ( chopped into cubes)
Garlic- 7 flakes (cut fine)
Ginger - 1 inch (cut fine)
Pumpkin ( Lauki ) - 1 cup ( cut in to medium sized cubes)
Kashmiri chillies- 6

Turmeric powder- 1 n 1/2 tsp
Cummin powder - 1 tbsp
Coriander powder-1 tbsp
Red Chilli powder-1tbsp
Cardamom powder- 1 tsp
Mango powder ( amchur)- 1tsp

Mustard seeds - 1 tbsp

Coconut milk-2 cups

Salt as required

Method :-
Heat a little oil in a nonstick pan and once hot put in kashmiri chillies, cut garlic n ginger n fry till brown. Then add the onions n once brown add the chopped tomato.Fry for a while and add the red pepper.Toss well adding a little water. Mix all the powdered masalas with  a little water to make a paste and add the same to the bubbling mixture ( add a little water if needed ) and cook till the mixture dries. Take off the burner and allow to cool. Once cooled to room temp ,grind the same in a blender to a smooth mixture.

Add a little oil n throw in Mustard seeds .Once they splutter ,add the ground mixture n stir . Add prawns n Pumpkin and cook on high for about 5 mins.Add the coconut milk and salt n stir . Then on a slow flame cook till it bubbles before adding my all time favourite Dollop of love n let it simmer :) . Serve with hot steaming Rice.
