Some people prefer to use the ready made Tandoori masala but i prefer to grind my own as below, having learned the hard way. I tried this one time with a ready made packet and the fish disintegrated coz of the Papain in it. However the choice is yours .... :) I would not recommend marination for an hour... less the better if you go with the ready pack. The taste will definitely vary :) Well , try it my way !!!
Ing :-
Fresh Salmon- 14 fillets
Garlic Paste- 2 n 1/2 tbsps
Ginger Paste -2 tbsps
Red Chilli Powder -2 tbsps*
Cloves- 9*
Cumin Seeds - 1 tbsp*
Coriander Seeds - 1 tbsp*
Cinnamon - 1 inch stick*
Fennel seeds- 1 n 1/2 tbsps*
Mace- 4 strands*
Pepper Corns - 1 n 1/2 tbsps*
Cardamom- 6 pcs*
Nutmeg- 1/4 piece *
Kasuri Methi / Fenugreek Powder- 1tsp*
Tomato Paste / ready made Puree - 2 n 1/2 tbsps
Cooking Cream - 3 tbsps ( you can use Curd instead of cream )
Lemon Juice - 2 n 1/2 tbsps
Red food colour - as required (also optional)
Salt to taste
Oil as per required
Method :-
Pre heat grill on high. Once heated ,turn to medium.
Grind all the ing marked with an * and set aside.
Take fish fillets and apply lemon juice and a little salt and rub well. Add the ground Masala and leave to marinate for an hour.
Then take a non stick pan ,add oil and throw in the ginger garlic paste and fry well on medium heat. Add the tomato puree /paste with a little water . Mix well and season with salt if needed. Add the Cream and stir on high.
Take off the gas and mix marinated pieces of fish in this cooked mixture.Apply well on all pieces and grease an aluminium foil tray with a little oil and place under grill turning from time to time till cooked . Once done increase heat to high and brown pieces of fish on both sides. Sprinkle a load of sweet love :) and Serve with some onion salad.....Enjoy!!
