Yummy Mackerel in Coconut




* This concocted :) yummy gravy can be used to cook shrimp, oysters ,shark fish ,king fish ,chicken or        mackerel. I opted for Mackerel as i was simply lusting for it ..:) :) *

Ing:-

Cloves- 12
Cinnamon- 1/2 inch
Black Cardamom-1
Pepper corns-1 tbsp
Coriander Seeds- 2 tbsps
Fennel Seeds- 1 n 1/2 tbsps
Nutmeg- a pinch
Mustard Seeds-2 tsps
Star Anise- 1
Mace-4 strands from single piece only.

**Dry Roast the above ,get it to smoke and Grind to a fine powder and leave to rest** -


Onions- 2 ( medium sized chopped)
Ginger-1 inch
Garlic-8-9 flakes
Coriander Leaves- a hand full
Cumin Podwer-1 n 1/2 tsp
Turmeric Powder-2 tsps
Curry Leaves- 6-8
Fresh coconut or desiccated coconut- 1/2 cup
Thick Coconut Milk- 1 and 1/2 cup
Veg Stock cubes - 2
Tamarind Paste- 1 n 1/2 tbsp
Salt as per Taste


Method:-

As mentioned above ,grind the dry whole spices after roasting without any oil and leave  aside.

In the same pan dry roast the coconut with the curry leaves to a caramel brown and leave to cool.

Add oil to pan n fry onions till soft and reddish brown in colour.

Now take the coconut,onions ginger,garlic,coriander leaves, Cumin powder,Turmeric powder and Tamarind  paste and blend together with half cup of coconut milk . Grind to a smooth consistency. Open cover and now add already ground dry roasted spice mix and run through blender for 5 mins.

In your cooking vessel add a little oil and heat. Once warm add the ground Masala to to and mix and cook till it starts changing colour and the raw smell goes. Add the coconut milk and the veg stock and taste for salt. Add more salt if needed. Give it a good stir and get it to boil once ..lower flame and add the fish n cook till done... Garnish with love and serve with steaming hot rice or chapatis. Enjoy !!!!
