Prawn Masala Rice




Ing :-

1 and 1/2 kg Prawns- ( cleaned completely of shell n gut and apply a little salt to them and leave to rest)
Rice - 2 cups ( washed well and pread on cloth to dry )
Veg Stock cubes-5 pcs
Onions- 4 ( medium sized) chopped length wise and fine
Tomato- 1 cup chopped
Cloves- 12 *
Cinnamon- 1/2 inch*
Pepper corns- 20*
BlackCummin Seeds/ Shahi Jeera - 1 n 1/2 tsp *
Fenugreek / Methi seeds-1 tsp*
White Cardamom- 6 ( take off outer shell ) *
Star Anise - 1
Fennel seeds- 2 tsps*
Bay leaves-3*
Dried Red chilli flakes-1and 1/2 tbsp*
Garlic -8 to 9 big flakes chopped fine
Ginger Paste - 2 tbsps
Coriander Leaves -2 hands full
Green Chillies-9 ( slit )

Boiling Water- 4 cups ( Please use same cup as the one used to measure the rice )

Ghee or oil as required .


Method:-

Dry Grin all the ing marked with an * and keep aside

Take a heavy bottomed vessel and add Ghee / oil once heated throw in the  onions and fry till it turns light brown .add the tomatos and further fry till soft . Now add the Garlic ,Ginger paste and slit green chillies and fry till raw smell goes.
Add all the ground Masala and further cook. for 5 mins. Throw in the Prawns and add the stock cubes. Cook on high till mixture dries a little  and prawns cooked. ( please dont add any water )
Once done,add the rice and fry gently in the masala mixture for 7 to 10 mins  .Pour the boiling water and cook on covered on medium till done. Add the love and some nice chopped onion goes well with it...Enjoy!! :)
