Porcini stuffed with Honey Goats cheese ,Blue cheese,onion n garlic topped with cheddar..




Ingredients :-

Porcini Mushrooms- 6 ( cleaned well n patted dry with a kitchen towel and stem takem out gently. Keep stems aside) .You can also use Portobello .
Spring onion- 1 cup ( chopped fine )
Garlic flakes- 8 (chopped fine )
Ginger - 1/ 2 inch chopped fine
Red Pepper - 1 ( chopped fine)
Green chillies- 6 ( chopped fine )
Coriander leaves - 1/2 cup ( chopped fine)
Goats cheese- 4 tbsps of crumbled cheese
Blue cheesse - 4 tbsps of crumbled cheese
Cheddar cheese- 3 tbsps
Honey- 6 tsps

Salt n pepper to taste.
Oilve oil - enough to grease the baking tray an the mushrooms

Method:-

Pre heat the oven at 120 deg.
 Dry mushrooms well .... take a baking tray and pour a little olive oil in it. sprinkle a little salt over it.  Cut the reserved mushroom stems very fine.Then grease each mushroom with oil and place on tray.
In a non stick pan,add oil and fry onion,garlic ,green chilli , ginger and the red pepper on high and then add the chopped stems ....stirring continuously.... throw in the coriander leaves and mix..... season with salt and pepper and take off gas ,leaving it to cool .

Please note that both the goats cheese and blue cheese are very soft n creamy in texture s gently crumble the same..if not roughly chop them both..seperately.

Once mixture has cooled ....take each mushroom a press a little of the goats cheese and Blue cheese in the center and fill the mushroom evenly with the filling mixture..careful not to over stuff the mushroom. Sprinkle a little cheddar on top of each mushroom and place tray in oven n bake till mushroom cooks through and cheese melts n browns a little..... sprinkle love n bite into these yummy stuffed mushrooms... :)
