Kadai Chicken



Ingredients:-

Fresh Chicken - 1 kg ( cut into medium pieces ) If its a Big Bird please increase the spices accordingly .
Onions- 4 ( medium sized grated or gring in the mixer )
Tomato- 3 ( medium sized ) . Place in boiling water n take out skin. Grind in mixer n keep aside.
Ginger Paste- 1 n 1/2 tbsps
Garlic Paste- 2 tbsps
Green chillies- 10 ( slit )
Cardamom- 3
Turmeric Powder 1 tsp
Cloves - 7
Chicken stock cube - 1
Kasuri Methi / Dried Fenugreek - 1 n 1/ 2 tbsps
Pepper Powder- 1 tsp
Salt to taste
Ghee - 4 tbsps ( you can use oil instead )

* Seperately Grind *-
Coriander seeds - 1 tsp
Cloves -8
Cinnamon- 1/2 inch
Star Anise- less than half piece
Mace - 3 single strands
Cardamom- 4
Dry Grind all of the above and leave aside.

Method :-
Apply Turmeric powder , Pepper powder and Stock cube to chicken and allow to stand for an hour.

Take a Non Stick Kadai and add the Ghee or oil n once hot add the ground onion,slit green chillies,ginger paste , garlic paste,cloves & Cardamom... n fry till raw smell goes and it changes colour . Note that it will not turn brown like some say..;)  But do fry it well stirring from time to time n till it dries ...Then add the ground tomato and fry for 10 mins . Now add the chicken pieces and the Kasuri Methi and cook till done ..season for salt and dont add any water please. Once chicken is cooked ,sprinkle the ground masala and add the love over the simmering chicken n toss really well.... Leave covered till ready to serve..

Goes well with roti and raw onions...;)
