Grilled Stuffed Mushrooms




Ing :-

Fresh Mushrooms - 14 ( look for medium sized ones or big sized ones )
Spring onion- 1/2 cup
Green chillies- 6 ( cut fine )
Garlic paste- 2 n 1/2 tbsps
Ginger paste 1 tbsp
Coriander Leaves - 1/2 cup
Olive oil - 2 tbsps
Salt as required
Pepper as required
Grated Cheddar cheese - 2 tbsps

Method :-

Pre heat the Grill on high.
Wash Mushroom well and Pat dry. Twist the stems and take them out very gently so as to create a cavity to spoon the filling. Reserve the stems and cut them into tiny pieces.
Take a foil tray and spoon a little oil on to it and sprinkle a little salt at the bottom . Place Mushrooms smooth side down not too close apart and set aside.
In a non stick pan add remaining oil and add onions n fry till soft. Then add the chopped stems ,garlic,ginger ,green chillies n chopped coriander leaves and fry till soft n cooked . Season with salt  and Pepper and mix. Take off pan and leave to cool for 10 minutes.

Take foil tray with Mushrooms and spoon filling inside the cavity and use ur hand to stuff if needed.Neatly arrange the mushrooms  and put a little cheddar on top of  each mushroom. Once done ,place tray under grill on high and cook till they turn to a caramel brown . Add a dollop of love and serve hot!! Enjoy!!!
