Ing :-
Aubergine- 1 ( medium sized ) cut into small chunks
Red Pepper - 2 pcs diced
Onion - 1 ( medium sized )
Tomato- 1 ( medium sized )
Garlic- 7 flakes ( chopped very fine)
Ginger paste- 2 tsps
Fennel seeds- 1 tbsp
Coriander Leaves- 1/2 cup cut fine
Green chillies- 4 pcs cut fine
Salt and Pepper to taste
Oil as required
Method :-
Heat oil in a non stick pan and add the fennel seeds and Garlic.Fry till garlic turns brown. Now throw in the onion and fry till soft and then add the tomato and ginger paste and green chillies. Fry a bit and then add the Aubergine. Mix well ,add salt n pepper and stir . Lastly add the coriander mix well and cook till done ...not to foget the love....:)
P.S this may sound like a rather unusual recipe but it was a tasty experiment ... I tried not to use any powdered masalas and was pleasantly surprised at the taste.... hope you enjoy it as much as my family did. Happy cooking !!! :) :)
