Ing-
Shrimp-1 kg ( cleaned and shelled )
Onions-2 med sized cut fine
Tomato-3 ripe and juicy one's cut fine
Ginger- 1 n 1/2 inch piece *
Garlic - 12 flakes *
Green Chillies- 4-6 *
Turmeric powder- 1 n 1/2 tsps
Tamarind paste- 2 tsps
Fresh Cream - 1 n 1/2 cup ( you can use coconut milk instead if you dont wish to use cream )
Salt as per required
2 Tbsps of chopped coriander leaves
Dry Roast the following :-
Fennel seeds- 1 n 1/2 tsp
Cloves- 8
Cinnamon-1 inch piece
Coriander seeds-1 tbsp
Cummin seeds- 1tsp
Star anise- 1
2 Bay leaves
Methi seeds- 1/2 tsp
Freshly grated coconut- 1/2 cup
Method-
Dry Roast all the whole spices as above and after it turns to a light brown colour add the ing marked with an asterix to the pan n roast till it changes colour. Add the grated coconut n fry till it turns a golden brown. ( please roast all the above on a low flame ). Leave to cool for a while n then grind all of it to a fine paste adding very little water each time.( I use my dry grinder so as to powder the whole spices thus add a little water at a time)
.Add just enough oil to a nonstick pan n fry chopped onions till golden brown in colour. Then add chopped tomato's n fry well. Add the ground Masala and and the turmeric powder n fry till the raw smell disappears .( you may want to add a little water if the masala starts sticking to the pan ) ,add the tamarind paste and once thorougly cooked ,Add the salted shrimp n cook on high flame ,stirring from time to time . Pour in the cream ( coconut milk ) and stir . Season with salt n garnish with chopped coriander leaves....... LASTLY ADD A DOLLOP OF LOVE !!!!! :) :)
