SENSUOUS DELIGHTS FROM MY KITCHEN TO YOUR'S.( After much persuasion from my dear friends :) ): Steamed Mussels in Creamy Wine and Garlic sauce: Ingredients :- Mussels - 2 dozen ( cleaned well and beards scrubbed off under cold water ) Onion - 1 medium sized ( chopped fine )...
Steamed Mussels in Creamy Wine and Garlic sauce
Ingredients :-
Mussels - 2 dozen ( cleaned well and beards scrubbed off under cold water )
Onion - 1 medium sized ( chopped fine )
White Wine - 1/2 cup
Dried Parsley- 1 tbsp
Sweet Basil - 1 tbsp.
Garlic - 6 flakes ( finely chopped)
Butter- 2 tbsps.
Cream - 1 cup
Salt as per requirement
Method :-
Take a big pot and heat butter .Add onion and Garlic and sauté. Throw in the dried herbs and add the wine and simmer for about 5 minutes. Place Mussels in pot ,stir well and steam till Mussels open. Please discard the ones that remain closed.
Add the cream and give it a good stir. Cook for about 5 to 7 minutes stirring from time to time.
Taste sauce for salt ( I don't use any but some may like a little of it )
Lastly add a dollop of LOVE ;)
Serve hot with Crusty bread..... Yummmmm!!! Happy Eating... you will be sorry you didn't cook more..;) Enjoy!!
* If you don't want the Cream, don't add it... the Broth is awesome too... just dip the Crusty bread in it... :)

Ing :-
Prawns - 1 and 1/2 kg cleaned and deveined ( wash well,apply salt and leave to rest )
Onion - 1 large or 2 med cut fine
Tomato- 2 med sized ,chopped fine
Ginger - 1/2 inch chopped fine
Garlic- 4 flakes chopped fine
Turmeric powder- 2 tsps.
Coconut milk - 1 can
Green chillies - 6 ,slit
Dry Roast the following and grind to a powder :-
Kashmiri chillies- 5
Coriander seeds -1 and 1/2 tbsps.
Cummin seeds - 1 tbsp.
Pepper corns- 1 tbsp.
Oil as per required
Salt to taste
Method:-
In a non stick pan ,heat oil and brown onions ,ginger n garlic till light brown in colour. Add the chopped Tomato and further fry till it dries out . Add the ground masala and mix well. Fry for 5 minutes.Add the turmeric powder , slit green chillies and season with salt.
Add the coconut milk and bring to a boil . Add the prawns and cook for about 20 minutes.
Add heaps of love and serve with hot steamed rice....:) :)
( Please note this curry base can also be used for a veg curry .)

Thai Mushroom,Yellow Pepper and Cottage Cheese Curry
Ing :-
Coconut milk- 1 tin
Onions - 2 ( medium,cut length wise but not too thin )
Fresh Mushroom's - 2 and a half cups (chopped)
Yellow Pepper - 2 ( medium sized ,diced)
Cottage Cheese ( Paneer ) - 250 gms ( diced)
Kaffir leaves - 8
Lemon Grass- 1 sprig ( cut into 3 to 4 pieces)
Green Chillies - 6 ( slit)
Coriander leaves- 1/2 cup ( finely chopped)
Ginger - 1 inch piece ( chopped fine)
Garlic- 4 flakes ( chopped fine)
Pepper powder - 1 tsp
Turmeric powder- 2 tsps
Fish sauce - 2 tbsps. ( optional for pure vegetarians )
Veg stock cube- 1
Salt if required .
Oil as per req
Method :-
Heat oil in a non stick pan and once hot add the kaffir leaves, lemon grass ,green chillies, ginger, garlic and once infused in oil , add onions and Yellow pepper and toss. Add Mushrooms and stir well .Add pepper powder, Fish sauce and veg stock cube and toss well. Cover and cook for about 5 minutes. Add Cottage cheese and chopped coriander, stir and add turmeric powder and coconut milk. Taste for seasoning . Add the bigggg dollop of Love ;)... Bring to a boil and take off Gas. Serve with hot steamed rice....
This again is quick and easy .... and very tasty... :)

Succulent Oriental Fish
Ingredients :-
Any white meaty fish boneless n skinless ( I used Hammour ) - 1/2 kg
Star Anise - 2 ( whole)
Kaffir leaves - 5
Lemon Grass - 1 tall sprig ( cut into 3 to 4 bits )
Green Pepper - 1 ( big sized ,diced )
Garlic - 5 flakes ( Chopped fine )
Ginger - 1/2 inch ( Chopped fine)
Green Chillies - 6 ( slit )
Fish sauce - 1 and 1/2 tbsps. ( available at all supermarkets in the Asian or Thai section )
Oyster sauce - 2 tbsps
Red Onion - 1 ( big sized ,cut length wise and not too thin.. )
Salt - to taste
Pepper powder - 2 tsps.
Oil as per required
Method:-
Wash Fish, cut into medium pieces, apply salt and leave to rest .
Heat oil in a non stick pan , add the Kaffir leaves, Green Pepper, Star Anise , Lemon grass, ginger, garlic n Green Chillies and toss. Once it gives out a subtle aroma add the fish sauce and place pieces of fish in the pan . Fry a bit turning them quickly . Sprinkle pepper powder and toss again.... Now add the oyster sauce ,mix well, cover and cook till done. ( tossing fish from time to time ) .Lastly add a dollop of Love :)
This is a simple and quick Recipe but utterly delicious. Happy Eating !!

Paneer ( Cottage Cheese ) Bhurjee....
This is my version of paneer bhurjee... its different from the usual but just as yummmm :) The Ginger and Garlic give it a lovely flavour.....:)
Ingredients :-
Paneer ( cottage cheese ) - 400grams ( crumbled )
Onions - 2 medium sized cut lenght wise
Garlic - 6 flakes cut fine
Ginger - 1/2 inch chopped fine
Coriander Leaves - 4 tbsps finely chopped fine
Green chillies - 5 cut fine
Cummin seeds - 1 tbsp
Cummin powder - 1 tsp
Salt as per taste
Oil- as per required
Method :-
Heat oil in a non stick pan and throw in Cummin seeds. Once it starts to smoke, add the Ginger , Garlic n Green chillies and fry till brown. Add the Onions n fry till soft n light brown in colour. Then throw in the crumbled Paneer and mix well. Add the Cummin Pwd and the Coriander Leaves and Toss mixture. Add enough Salt ,Cover n cook for 10 minutes.Cook till Paneer starts to turn to a light brown. Add a scoop of LOVE .....and serve hot with Chapattis or Roomali,s......
